Homemade Lemon Curd
Homemade lemon curd tastes absolutely delicious and has many uses as a dessert.

Try this really simple one below and use in a variety of ways to create stunning desserts by simply adding fresh lemon curd to lightly whipped double cream, fill little chocolate cups with the mixture, decorate with a drizzle of warmed lemon curd and thin strips of orange zest.
Alternatively, fill meringue nests with the lemony mixture and decorate with fresh fruits. Or for a truly stunning dessert, layer the lemon mixture with strawberries in tall clear glasses, top with pulled sugar or chocolate decorations/sprig of mint and a raspberry! For a really simple dessert just serve the delicious lemony mousse with a bowl of fresh cherries or strawberries.

Lemon curd Ingredients
- 4 unwaxed lemons, rind and juice
- 4 large eggs, lightly beaten
- 8oz unsalted butter
- 1lb caster sugar
Makes approx 3 x 1lb jars

Method
Wash and dry the lemons, finely grate the rinds and squeeze out the juice. Place sugar, rind, juice butter and beaten eggs into a large basin on top of a saucepan of simmering water. Stir continuously until the mixture thickens and coats the back of a spoon.
Pour into warm sterile jars, cover and seal.
Top Tip
Use the cooled mixture to create your stunning dessert or use a decorative jar and label to make a special gift for the chef who has everything. Edible gold leaf looks fantastic on the top of the jar for that extra special gift.
